Greek mountain tea, also known as shepherd's tea, is made from the leaves, flowers, and stems of Greek verbena (Sideritis scardica). It is still harvested today from wild cultivation in the Greek regions at altitudes of 1,000 meters and above.
Traditionally, Greek mountain tea is prepared by adding the dried plant (5 g per 300 ml of water) to boiling water and letting it steep for 5 minutes. The tea is then served hot with a little honey and, if desired, lemon juice.
